Bicol Express

Ok. Disclaimer first! This is NOT the authentic way of cooking this dish but this recipe is a combination of all the ‘how to cook Bicol Express’ I have seen online. So I came up with my own version that worked with me well without omitting any of its essential ingredients or atleast from what I know are essential.

For those of you who are not familiar with this dish, this can get very spicy so if you are not into spicy foods this one is not for you!

Prep and Cook time: about 30 minutes.

Servings: 4 – 5


  • 1/2 Pork Lomo or Pork Liempo
  • 2 – 3 (depending on size and desire spicy taste) Serrano Pepper
  • 1/2 Onion
  • a half a thumb Ginger
  • 2- 3 tbsp (depending on desire salty taste) Shrimp Paste (Alamang)
  • 1 can Coconut Milk
  • Oil (if using Pork Lomo)
  • Salt and Ground pepper 


  • Cut pork into cubes.
  • Cut onion, pepper and ginger into cubes like in the picture.

  • Put fire in medium heat and in your pan,

– if using pork liempo (or any with fats in) DO NOT put oil as the pork will release oil from the fats.

if using pork lomo (or any pork without fats) DO  put oil to help in sautéing.

  • Just leave pork in pan while it cooks, stir occasionally to prevent from burning.
  • After about 7 – 10 minutes, add the onion and ginger without removing the pork in the pan. Stir occasionally.
  • After 10 minutes, add the serrano peppers. Then add the shrimp paste. Stir occasionally.

TIP: the longer you saute (sangkutsya) the better. Trust me 🙂

  • Stir in the coconut milk.
  • Turn knob into low fire and let the food boil/simmer while waiting for the pork to be tender.

– if using Pork Liempo: this needs time, check the pork if tender while food is in simmer.

– if using Pork Lomo: this is already tender so, when the food is boiling already, proceed to next step.

  • Taste the food first so you’ll know how much salt and pepper you’ll be needing to add.

TIP: Salt and Pepper must be done only before turning off the stove.

And there you have it. Bicol Express finish product!

If ako si Ate Best Friend sa Jollibee commercial

OKAY. So Jollibee released a new commercial recently and it is a prerequel of the one they released early this year. Everyone was in awe with the first one, yung “vow” but on this one, hati eh.

First of all, kudos to the people behind this campaign. I’m pretty sure you all worked hard for this. Good job for thinking outside the box. Magaling yung concept. Relatable!

Back to the commercial.  MASAKIT SYA BES! If I will put myself in her exact shoes and bring this whirlwind romance to life. Heto ang aking saloobin. 

If napansin mo, that very first time na nagkatinginan tayo, Napayuko ako. It’s because sa utak ko, “oo cute ka, pero hindi mo dapat nakita na nakatingin ako sayo. Dyahe!” but then you came up to me and asked if the seat was taken. I wanted to be alone sana so I could eat and study at the same time but then here you are all cute and charming. So kahit sabi ng parents ko “Don’t talk to strangers” eh I shared my table with you. Nauto mo ako sa smile at french-fries dipped in gravy! Napa-smile tuloy ako.

Then you saw her. Oo! Nakita ko yun! She was looking at the menu – You were looking at her – I was looking at you… Sino nakatingin sakin? I should have known by then that this love-struck feeling I have is not going anywhere. But then again nauto mo na naman ako sa french fries! So kahit I feel broken inside, napa-smile mo pa rin ako. Ang saya mo kasi eh after seeing her.

I was very supportive of you na kahit na para sa kanya na yung ginagawa mo eh ok lang. Kahit sabay tayo nagmumukhang engeng, I still cheer for you,kahit deep inside ang sakit sakit na. Yung totoo, nahawa ka ba sa pagiging dense nya sayo?

Then here comes her wedding. You were standing by the aisle, staring at her, speechless, amazed and hurt at the same time habang siya staring at the altar, walking, trying not to bawl due to happiness. And me? Staring at you, crying, and convincing myself that you and I will never going to happen. But then you saw me. I looked down. I walked away. I left.

Then now, here you are, eating french-fries while reminiscing our good times together. Nakakatawa ka. Just because you realized that I have feelings for you, eh bigla mo na lang din maiisip na gusto mo din ako? Of all the people you should be the one to know that what I felt for you is something really painful. Something that needs time. If you were really my friend… best friend, hindi mo ako bigla susungaban ng ganoong hirit. Sabay hahawak ka pa sa kamay ko pagkatapos mo hawakan yung french-fries. “Nagpunas ka man lang ba? Ang greasy ng kamay mo eh!”

So, what now? You like me, ok. Why just now? Gusto kita, but I have to move on from you! Kaya nga ako nakangiti ng hinawakan mo kamay ko eh kasi this time, I know better! There’s a perfect time to find your perfect pair (Jollibee, 2017). That’s true! But this is not the right time because you are not the one for me! You will always be my friend and I deserve someone better than you to be my “the one”.

Weight Journey Vol. 1

Since I resided in Canada, I indulged myself with too much food. I ate the same amount of serving I used to have when I was still in college and spoilt myself with the foods I used to overlook. This habit stayed on me for years without thinking too much of where this could lead me. All I know was that, I am happy and I am full.

For the past years, I kept eating cups of rice, large fast food meals, bars of chocolate, slices of cake and pizzas, sodas, and even chugging up beers regardless of what time of the day it is already. Lifestyle wise, my 8 – 12 hour job was the only exercise I have. I don’t even exercise when I am off. I pampered myself too much.

Though, there were times that I tried to be fit. I applied for a gym membership, I did Zumba, I biked, I trimmed down the calories I eat and I drank slimming juices but those only lasted for weeks. Honestly, some of these were really effective like the slimming juice that helped me loose 10 lbs. in 2 weeks but it did not last me long as I keep coming back to my old eating habit and I stopped drinking it.

As I get heavier and heavier, I notice that when walking even in a short distant, I grasps from breath. Waking up early is getting harder each day. Skin is getting flaky, dryer and flabbier. But what really motivated me is when I saw visible red scars in my skin. Yes! It is what you think it is and Yes! It is going to stay there forever!

Weeks after I noticed the scary scars, I started eating somehow healthier foods and my lifestyle is not so sedentary anymore. My weight stopped accumulating even though there are days that I cheat on my diet (I mean, Cheat Big time!). Now, I am proud to say that I have already lost 12 lbs.

I succeeded this 12 lbs lost journey in a very natural way and without shedding any money (perhaps, for car gasoline of course!). I started off by walking every morning for at least an hour which costs me to have at least 8 thousand steps per day. I do some arm, ab and and leg exercise in the afternoon. I lessen my rice intake starting with 1 cup each meal to 1/2 cup (to none/day at all) and I stopped drinking carbonated drinks. I even documented the journey and posted it on social media story which made me more motivated as it served as something that I look forward doing.

After this journey, I realized that I should have started loosing weight and tried living healthy years before. I should have not waited for some skin abnormalities to show up nor waited to gain so much weight before I started doing this.

Loosing weight and exercising is not hard. Maybe in the beginning but not throughout the process. Once you started and saw the result, You’ll realize that it was all in the mind.

New York Food trip!

Aside from enjoying the tourist spots and sceneries in the city last month, we also took the chance to eat some of the city’s mouthwatering foods.

I’ve heard good reviews regarding the Halal Guys’ food truck so I sort of made sure that we are going to have a taste of it. This guys have two food trucks located around Times Square. One is at the 6th Avenue while the other one is at the 7th and both are parked in the corners of the street. We ordered Gyro and Chicken over rice. This two meal costs 6-7 dollars each and can be shared by two to four person. I am giving them a 9/10 score as their food is really filling and awesomely delicious! By the way, their meal doesn’t come with a drink but it comes with lots of white sauce (don’t say no to this!) and hot sauce (a little goes a long way!) in separate pouches. Also, if you see them with a big line up especially during lunch hour, don’t be dismayed because the guys serve really fast.

The City Kitchen which is connected to Row NYC is a mini food court outside the mall. As I said in my New York Part 1 blog, we tried and I recommend trying Dough and Whitman’s for breakfast. The doughnuts from Dough were massive in size and tastes good plus they have several flavors to choose from. We tried Whitman’s for breakfast before we left the city. It was a bit pricey (or at least for me) for breakfast but since their food serving is huge and appetizing, the price will make sense. They have several choices for breakfast such as omelettes and pancakes but their meal doesn’t come with a drink.

Sweet Churros which is located at the Food Gallery in 32nd Street. This handcrafted churros is something dessert enthusiast should not miss. Their churros is served depending on your choice of flavor. It is about 10 inch long, looped and can be serve with an ice cream. The churros is really soft and scrumptious and suits good with the soft ice cream. Price wise? Affordable!

Artichoke Basille’s Pizza, oh this is the bomb! Among all the branches in New York we tried the one located in Greenwich Village. The branch has only limited seats and we were lucky enough that when we get there, there was no costumer yet. We ordered Seafood Pizza, Margarita Pizza and of course Artichoke Pizza. The pizzas were enormous that it is served with two paper plates. Among the three pizzas, my favorite was the Artichoke. It was so cheesy and so deliciously perfect! No wonder that locals lines up for this!

We also tried Bibble and Sip cafe down in 51st W. The place was so packed when we got there, luckily we did not wait that long for a table. We ordered Matcha latte, some cold teas, a cake and a couple of creampuffs – Earl Grey and Matcha flavor. The foods were very instagrammable. The creampuffs were ok for me as I am not a big fan of matcha but if you are you’ll love them.


Bibble and Sip

Jeepney Gastropub. As soon as we came in, the crew greeted us warmly asking where we want to be seated because they also have tables outside surrounded with bamboos that will make you somehow feel the Philippines’ vibe. The menu was very simple and somehow confusing as they offer bottomless brunch then listed bottomless drinks underneath. We spoke to the lady serving us for explanation and as we all understood her, they are offering bottomless food and drinks for 30$ for a limited time. After finishing our first “light” meal which only cost around 20$, we decided to go for our next order. The lady then told us that it is not part of the “bottomless brunch” anymore which made us feel furious. The lady did apologized to us but did not bother to come back to our table anymore and had somebody to take care of us. Food wise, there is nothing fancy with it. Not even mouthwatering. We paid way bigger than we ate and left the restaurant with tummy still not full. This supposedly enjoyable experience turned to be a disappointing one.


Jeepney Food Entree

Jollibee, the highlight of our New York food trip I guess. Haha. This was actually an impulsive decision we all agreed on. It was already past 9pm when we left to go to Woodside where it is located. The place was packed with mostly Filipinos having a taste of home land. We ordered Chicken joys, Palabok, Spaghetti and of course Peach Mango Pie. It is already given that Jollibee tastes delicious but what surprised me is their portions. They have twice the serving comparing to Philippines and Las Vegas branch! It was such an enjoyable experience.
